However, some vegetables have more carbohydrates than others, such as potatoes, peas and corn, so you should account for this as either grams of carbohydrate per serving or as a serving of vegetable or starch from the Exchange Lists. As a general guideline for meal planning, the American Diabetes Association suggests you start with 45-60 grams of carbohydrates per meal. To fine tune your meal plans, it's a good idea to visit a registered dietitian or a certified diabetes educator.
