Baked Onions

Simple and easy, baked onions is a great hassle-free side dish for individuals with diabetes. Eat alone or along with chicken, steak or vegetables, and this diabetic side dish is sure to please.

Ingredients:

  • Onions (cooking size, 2 - 3 per person)
  • 1 tsp. margarine/butter (per onion)

Directions:

  1. Cover pie plate in foil (for easy cleaning). Do not peel. Place onions on pie tin and bake one hour at 400 degrees.
  2. When done, cut off root end, squeeze stem end and it should come out whole. Spread margarine/butter over onions, season with salt and pepper to taste. Not for microwaves.
