Artichoke Pizza

This delectable pizza is easy to make and nutritious, too! Artichoke, the main event, is an excellent low- calorie source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes are also full of powerful disease-fighting antioxidants.

Ingredients:

  • Nonstick cooking spray
  • 1 cup thinly sliced mushrooms
  • ½ cup thinly sliced onion
  • ½ cup thinly sliced artichoke hearts (not marinated in oil), drained
  • 1 (6-inch) prepared pizza crust
  • ½ cup shredded reduced-fat Swiss cheese or reduced-fat Italian blend cheese

Directions:

  1. Preheat oven to 450°F. Coat small skillet with nonstick cooking spray. Cook mushrooms and onion over low heat about 10 minutes until soft but not browned. Spread on pizza crust.
  2. Top pizza with artichoke hearts and cheese. Bake 8 to 10 minutes or until cheese is melted. Makes 2 servings.
