Roast Turkey, Sun-Dried Tomato and Basil Wrap

Your taste buds will get all wrapped up in this quick and easy lunchtime treat. This roast turkey wrap is a delicious meal that will get you in and out off the kitchen fast.

Ingredients:

  • 2 Tbsp cream cheese, low-fat whipped
  • 2 tsp chopped sun-dried tomatoes or 1 1/2 sun-dried tomatoes, rehydrated and chopped
  • 3 basil leaves, chopped
  • 1 large whole wheat flour tortilla
  • 3 oz. sliced smoked turkey breast
  • 1 lettuce leaf, green leaf, Bibb or Romaine, shredded

Directions:

  1. In a small mixing bowl, combine the cream cheese, sun-dried tomatoes and basil.
  2. Lay the tortilla out and spread 1 tablespoon of the cream cheese mixture in the center. Place the turkey on the tortilla and spread the remaining cream cheese mixture on top of the turkey. Sprinkle the shredded lettuce on the tortilla and tightly roll each tortilla into a cylinder, ending with the seam side down.
  3. Cut the wrap in half on the diagonal and serve.

Note: For 2 cups cubed cooked chicken breast, gently simmer 3 small chicken breasts in 2 cups fat-free reduced-sodium chicken broth about 20 minutes or until meat is no longer pink in center. Cool and cut into cubes. Reserve chicken broth for pot pie, if desired.
