Strawberry Oat Bran Muffins

These delicious muffins contain the whole grain goodness of oat bran, along with fresh strawberries and a portion of pecans, rich in vitamin E and heart-healthy unsaturated fat. These muffins retain their moisture not from oil, but from applesauce and apple juice.  


Ingredients:

  • 1 cup all-purpose flour
  • ¾ cup uncooked oat bran cereal
  • 2-1/2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • ¾ cup buttermilk
  • 1/3 cup frozen apple juice concentrate, thawed
  • 1/3 cup unsweetened applesauce
  • ½ teaspoon vanilla
  • ¾ cup diced strawberries
  • ¼ cup chopped pecans

Directions:

1. Preheat oven to 400°F. Spray 24 miniature muffin pan cups with nonstick cooking spray.

2. Combine flour, oat bran cereal, baking powder, baking soda and salt in medium bowl. Whisk together buttermilk, apple juice concentrate, applesauce and vanilla in small bowl.

3. Stir buttermilk mixture into flour mixture just until dry ingredients are almost moistened. Fold strawberries and pecans into batter. Do not overmix.

4. Spoon batter into prepared muffin cups. Bake 17 to 18 minutes or until lightly browned and toothpick inserted into centers comes out clean. Cool in pan on wire rack 5 minutes. Remove muffins to racks. Serve warm or cool completely. Makes 24 muffins.
